Production notes

The plots chosen for this wine come from the central area of ​​the island. The maturity of its fruit has been controlled and measured throughout its development to determine the optimal harvest date, ensuring quality raw material. The bunches are transported to the winery in vintage boxes, not exceeding 20 kg in weight, so that they arrive in the best conditions, they are kept at low temperatures for 24 hours and are subsequently pressed. The resulting must, after a 24-hour static settling, is inoculated with selected native yeasts, which have previously been isolated. Once the fermentation is completed, the wine remains slightly cloudy at a temperature of 16ºC until bottling, to preserve the aromas of Malvasía Volcánica.

Tasting notes

The varietal character of Malvasía Volcánica dominates with floral aromas such as orange blossom or jasmine, which evolves towards stone fruit aromas such as apricot or peach. It appears fresh, with a saline character, with volume, good acidity and a broad and persistent finish.
